  • 1/2 pint Cherry tomatoes, halved
  • 1 cup Black beans, canned, drained and rinsed
  • 1/4 Red onion, chopped
  • 1/4 cup Sunflower seeds, raw
  • 6 cups Romaine lettuce, chopped


  • 1/3 cup Olive oil, extra virgin
  • 2 Tbsp Red wine vinegar
  • 1 Tbsp Lemon juice
  • 1/4 tsp Garlic powder
  • 1/4 tsp Oregano, dried
  • Salt, to taste
  • Black pepper, to taste



  • Prepare quinoa according to directions. Set aside to cool.
  • Prepare vegetables according to directions.
  • Whisk the dressing ingredients together.
